CHARACTERISTICS
Oysters have a hard and asymmetric shell, which is very fragile. They are formed by superposed calcareous sheets that give them that typical irregular form.
The valves and the colour are unequal. One is yellow, pale green or brown and the other is green-brown. Both have spots. They are at 80 m deep and prefer the areas where the water is frequently renewed.
They live 30 years at most.
CURIOSITIES
Nowadays, oysters are taken from the beds.
The oyster beds are specially in the Rķas Baixas.
The most well-known oysters are those from Arcade, where the Oyster Day has celebrated for many years. Also, the oysters from Carril and those from Cortegada Island are very famous.
The most common way of eating them is raw with lemon. It is important to eat them cold with a good white wine.
